Bifanas, anyone?

Well, it's June, and it's not only Portugal Day month, but it's also Euro 2008....soccer, or should I say, Futebol. 

What goes well in the summer, with good Portuguese beer, and a good game of futebol?!  A bifana!

                                          

Okay, it doesn't look like anything special, but it's so good in between a paposeco (a Portuguese roll).  Here is the receipe:

Bifanas( Marinated Pork Medallions)

This recipe was adapted from Portuguese Homestyle Cooking by Ana Patuleia Ortins. To buy her great cookbook click here.

Bifanas de Porco ( sautéed medallions of marinated pork)

Do this the day before:

3 or 4 cloves of garlic, chopped
1 tsp. salt, coarse
1 tsp. hot pepper paste
3 tsp. paprika
2 cups of white wine
12 medallions of pork loin, cut evenly about a 1/4 inch.

Portugal plays against Germany tomorrow...  Go Portugal!

Garlicky wine sauteed pork on a paposeco... Yummy!  I miss the Portuguesa deli I used to go to! Wah!
